Chipotle Jalapeño Grilled Cheese

I don’t need to say much here except you should go right now and make this grilled cheese.  It’s “In your face” good! When I made Paul this grilled cheese, he did a happy dance (Sshh..Don’t tell him I said that!) I love a standard grilled cheese, however, sometimes I just like to add some extra flavor and fun! I decided to put the extra flavor on the outside of the sandwich so you could still taste the yummy, melted cheese in the middle. I loved the results!!!

I used multi-grain Sourdough bread from a local grocery store bakery, however, any good, fresh bread will work (Ciabatta, Texas Toast, Pullman,).

First, make the chipotle jalapeño mayonnaise

Spread on the outer side of each slice of bread

I put a little butter in the pan and the SECRET to a perfectly crusted grilled cheese is LOW and SLOW! I have a gas burner and cook it on each side for at least 4-5 minutes a side.  I know we get in a rush, however, this trick really makes the perfect grilled cheese.

I seriously just stopped halfway in writing this post and went and made me one of these! SO GOOD!

I wasn’t sure what my kids would think of this as they love a classic grilled cheese. 2 of them really liked it and the other 2 prefer classic. The great thing is with grilled cheeses you can make classic and fun and it isn’t any extra work! No big deal!

Chipotle Jalapeño Grilled Cheese

Ingredients

~1 Tablespoon of Butter (for pan)

8 slices of good bread

16 slices of good melting cheese (I usually use at least 2 kinds)

For Chipotle Mayo:

1/2 cup Regular Mayonnaise

3–4 Tablespoons of Chipotle Peppers in Adobo Sauce (can use just sauce or chopped peppers with sauce)

4 Tablespoons of chopped cilantro

1 Teaspoon Garlic Powder

*6-8 thin slices of  jalapeño (optional-depending on your tolerance of heat)


Instructions

  1. In a small bowl, mix the Mayonnaise, Chipotle peppers/sauce, cilantro, garlic powder, and jalapeño (if using)
  2. Take the bread slices and spread the chipotle mayo on the outside of the bread.
  3. Heat the skillet over low to low-medium heat.  Melt butter in skillet
  4. Place slices in skillet and build sandwiches in the skillet
  5. Flip after about 4-5 minutes or until toasted brown

Notes

I sometimes butter and toast the inside of the bread before I cook the sandwich! So GOOD!

I have spread jalapeño jelly on the inside of the sandwich, which is fun and delicious too.

I usually use Velveeta slices or American Cheese mixed with another kind of white cheese

    This was really good! Made it without the jalapeños and it still had a good amount of kick to it. What else do you use this chipotle mayonnaise on? I have some leftover and am wondering if you have other ideas for how to use it?

      I am so glad you liked it!! I have used it on a regular sandwich, a burger, a wrap, on deviled eggs and also as a dip for french fries/sweet potato fries or even veggies! Hope that helps!!!!
