Easter Recipe Ideas

Easter is just around the corner! Do you need some ideas on recipes that are easy but taste great? When planning a menu for a good meal, I try to balance rich dishes with light and more hearty dishes. I also want to keep room for dessert and of course Reeses Peanut Butter Eggs (My favorite!).

Have any great recipes? I would LOVE to know what they are! Please share below in the comments!

~Sides or Appetizers~

Asparagus and Gruyere Tart

NOTES:

I’ve been making this for years and there is never any left over. It’s SOOO easy! Don’t worry about making it look perfect!

You can leave the asparagus whole or cut them up into pieces.

I ad fresh julienned basil on top after baking

I will sometimes mix fontina and gruyere cheese (Be sure to get GOOD cheese. It makes a difference)

Butternut squash Hummus

NOTES:

If you have kids that hold their nose when you say squash, I get it. BUT if you like butternut squash and want a different take on hummus, TRY THIS! It’s creamy, full of rich flavor, and is good for you! It is also super easy to make!

I used a little more squash than the recipe called for, which is why the color is more orange than the links original photos.

Tomato and Goat Cheese Tarts

NOTES:

These taste DELICIOUS and the flavors are great!

I use a biscuit cutter to make the tarts because I prefer them to be smaller in size

If you decide to make the tarts smaller, buy smaller sweet tomatoes to use

Watermelon Salad with Arugula and Parmesan

NOTES:

This salad is light and refreshing and the balance of flavors is so tasty!

-Regular Taco Bell style Crunchwraps
-Vegan Crunchwrap (the kids still liked the taco seasoned tofu)
-Crunchwrap with Siete grain free tortillas  We actually really like all of the versions!  #familytablethyme
This week I was a bit overwhelmed and unmotivated This week I was a bit overwhelmed and unmotivated to make a menu. Can you relate? I pushed through and got it done. I’m glad I did. I don’t have to be tempted for take out or wonder what I’m cooking tonight! 
 My menu is sometimes incomplete and I’m totally ok with that. My goal is always to plan at least 3-4 meals throughout the week with at least one night as “scrounge” night. #familytablethyme

 I decide to make my own customized "Hughes Family Meal Planner". With this notebook, we can keep a record of everything we are making, recipes we want to try, and recipes we liked/disliked each month.
