SPRING IS HERE!
I love transitioning into a new season with food! Gardens are being planted, which means lots of fun foods to cook with. Bring on the fresh herbs, salads, vegetables, and grilling outside!
There are SO many recipes out there and it gets overwhelming when deciding what to cook. Each month I keep a log of “Recipes To Try” AND “Favorite Recipes” using my meal planner notebook that I created. It really helps me to remember what to make again for the family! And next year when April comes around, I can go back and look at what my family favorites were!



This Super Green Sun-Dried Tomato Herb Salad with Crispy Chickpeas by Half Baked Harvest is probably one of my favorite salads I’ve ever made. It has LOADS of flavor and the crispy chickpeas are addicting! This salad is quite filling, but I sometimes serve it with a side of soup.

These Pinch of Yum Brussel Sprout Tacos with Cilantro Chimichurri are AMAZING! I used Frontera Taco sauce for ours and I honestly did not need meat. You can use any Cilantro Chimichurri on eggs the next day, in a wrap, on a salad, etc.

My entire family (even my pickier eaters) LOVED these Peanut Chicken Lettuce Wraps by Damn Delicious! The butter lettuce is perfectly balanced with the flavorful chicken. This is perfect for lunch the next day too!

We love Naan and it can be expensive at the store so I decided to make homemade Naan by Once Upon a Chef. It is SUPER easy and although it might not be convenient to make on a weekday, I would make a batch or 2 on the weekend to use for the week! It also freezes quite well. We use it for hummus, wraps, soups, or just as a side to any meal.

I LOVE hummus. It is super versatile and you can mix up a variety of flavors in it. I don’t really use a recipe, but just throw the ingredients in and adjust as needed. The hummus recipe by Once Upon a Chef is very close to what I do. I am a firm believer that you must have GOOD quality Tahini when making hummus. I love and prefer Soom Tahini.
