My Go-To Soups

I love soups. They are easy, quick, fun, budget-friendly, and fill you up (important for my large family of 6). Below are some of my family’s go-to soups we keep on rotation! We make soups a LOT in my house (even in warmer months). If a soup suggests toppings, then it is always worth it!

Chicken Tortilla Soup
Butternut Squash Soup with Curry Condiments
I love all the flavors in this soup–Coconut and curry make it super tasty and it never disappoints!
1 Pot Golden Lentil Soup
This soup is super savory, flavorful, and easy! It is super fast to make and great for leftovers or lunch during the week. We serve it over rice and/or with warm naan
Pumpkin Soup
I don’t believe pumpkin flavor is just for Fall! This soup is so full of flavor and savory!
I used roasted spiced pumpkin seeds on top.
All-American Chili
This chili recipe is easy and tastes great. I use beer (Pilsner or Amber) instead of wine and also use 1 can of Goya kidney beans and 1 can of Goya pinto beans
Don’t forget the cornbread!!!
We add a little sugar as the kids like it sweet. This recipe is super easy and super good!
Chicken-Lentil Curry Soup
I am super generous on the spices and flavor in this soup! It is even better the next day!
Thai-Spiced Rice Bowls
This dish may look a little strange in color BUT it is flavorful, hearty, and has FUN flavors. The broth is a peanut broth and the toppings are cilantro, mint, cucumber, carrots, and peanuts. It’s a party in your mouth! You can always add any protein to it.
Pauls Instant Pot Red Beans
I don’t know if Red Beans and Rice is considered a “soup” but I think it’s close enough! This is my husband’s recipe and I am a fan!
